

Holiday Gingerbread Dip
- 1 cup of Zero Sugar Cool Whip
- 4 tbsp of Greek Yogurt -low fat
or non-fat (no sugar added, plain
or vanilla flavored)
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1 tbsp molasses (or honey)
- 2 tsp of holiday sprinkles for garnishment
Preheat oven to 425 degrees. Lightly spray a 13 x 9 x 2 inch baking dish with cooking spray. In a shallow bowl, whisk together the paprika, thyme, garlic powder, onion powder, cayenne, pepper, and olive oil to make a marinade. Take a fish fillet, add to bowl, and gently press the fillet so the marinade adheres to it. Turn over the fillet to coat each side. Repeat the process with each fillet. Transfer the fish fillets to the baking dish. Bake for 15 min, or until the fish flakes easily when tested with a fork.


Banana Protein Muffins
- 1 ½ cups of whole wheat flour
(or almond flour)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¾ tsp baking soda
- ½ tsp salt
- 1/3 cup plain Greek yogurt
- 1/3 cup creamy natural peanut butter,
well stirred (or almond butter)
- 2 large eggs
- 2 ripe bananas (mashed)
- ½ cup packed light brown sugar (or monk fruit brown sugar)
- 1/3 cup granulated sugar (or ¼ cup of honey)
- 1 tsp vanilla extract
- ¾ cup chopped walnuts, toasted
Preheat oven to 350. Line a 12 cup muffin tin with paper liners.
Whisk flour, baking powder, cinnamon, baking soda and salt in medium bowl and set aside. Mix yogurt, peanut butter together in a large bowl until smooth. Add eggs, bananas, brown sugar, sugar or honey, and vanilla extract. Mix well. Fold the flour (dry) mixture into the banana (wet) mixture until the flour is mostly incorporated. Spoon the batter evenly into the muffin cups. Sprinkle the walnuts on top. Bake for 18-22 minutes. Removed from oven and let cool for 5 minutes before serving.
